Tasting
Colour
This wine reveals a beautiful pale yellow colour, illuminated by delicate green hues typical of its youth.
Nose
The aromatic bouquet impresses with its great intensity. It reveals subtle notes of citrus and pear, harmoniously blended with characteristic aromas of gunflint.
Palate
The palate offers a pronounced mineral backbone, supported by a perfectly integrated acidity that provides balance and freshness. With a structure that is both fine and powerful, this deep and precise Exception from Pascal Jolivet stands out for its remarkable length and vibrates with genuine authenticity.
Food and wine pairing
This cuvée elevates seafood dishes, pairing perfectly with lobster, scallops, sushi or a delicate fish coated in beurre blanc sauce. It also perfectly complements white meats served with a creamy mushroom sauce.
Service and storage
To fully appreciate this wine, it is recommended to serve it at a temperature of 12°C. With excellent aging potential, it can be cellared until approximately 2036.

The estate
Founded in 1987, the Pascal Jolivet estate is a key reference in the Loire Valley. Still run today by its owner and founder, the vineyard spans 120 hectares across the region's leading appellations, complemented by 60 hectares in Touraine. The estate has established itself as an internationally renowned name thanks to its artisanal approach and its commitment to the environment, certified organic. The estate is distinguished by its dedication to showcasing the pure expression of each terroir through natural winemaking.
The vineyard
This wine comes from a single plot planted on a great Sancerre terroir. The vines thrive on clay-limestone soil, which gives the wine its full typicity. The estate pays particular attention to vine management, with soil work carried out entirely by hand and traditional ploughing done with horses, in the utmost respect for the environment.
Winemaking and aging
For this Pascal Jolivet Exception 2016, the grapes are harvested by hand at sunrise. The bunches are then carefully transported in small crates to the press. After a light settling process, the must undergoes exclusively natural fermentation in a wooden conical vat. Finally, the wine benefits from careful aging on its fermentation lees for one year, giving it complexity and texture.
